Maturation: After harvesting by hand, the best whole bunches are sorted using a sorting table and carefully poured by gravity into concrete vats. Semi-carbonic maceration for around ten days, pressing, malolactic fermentation, ageing on piles for 2 to 3 years depending on the year.

Tasting notes:
Visual: Red with amber tints.
Olfactory: Powerful, tannic nose with notes of very ripe bigarreau.
Taste: Easy to drink, velvety with a long finish. Aromas of blackberry and liquorice.
Food and wine pairing:
Perfect with a leg of lamb, or simply with a barbecue.
